The Yes Girl Kitchen Recipe of the Week: High Protein Banana Muffins
Wooo Girl, do I ever have a killer recipe for you this week. It’s so damn delicious that its going to make you shout “YASSS” from the roof tops.
We all love some home baked banana bread right? If you don’t you’re crazy and you probably won’t enjoy this recipe but girl, if you do, keep on reading.
All banana bread lovers are going to DIE for this because not only are these delicious little muffins so damn tasty, so damn fluffy, and taste just like how mama made them, they are are high in protein and make a great pre-workout treat or anytime snack.

HIGH PROTEIN BANANA MUFFINS - 12 MUFFINS
What You’ll Need
3 large sized ripe bananas
1 large egg
1/2 cup brown sugar Splenda
1 cup of all purpose flower (or sub for almond flour check for sub instructions)
1/2 cup softened or melted coconut oil or butter
2 scoops of vanilla protein powder (casein or whey casein blend works best. I used PESCIENCE SELECT in Gourmet Vanilla).
1 tsp of baking powder
1 tsp of baking soda
pinch of salt
1 tsp of vanilla extract
Pre heat oven to 350, line muffin tin with paper cups.
Hulk smash the bananas until a nice liquidy texture.
Lightly beat egg until fluffy, add melted coconut oil and brown sugar.
Add to the banana mixture and stir.
Next, add the baking powder, baking soda, protein powder, salt, and vanilla. Combine well.
Slowly add flour, stirring well. Combine until batter is smooth.
Pour into cups and bake for 20-22 mins.
